Food is a part of life, so why not try to enjoy the process of making it? The hjalli's home kitchen has a collection of recipes, both my personal recipes and from recipe books I like. I LOVE collecting old ass recipe books that are region specific, like old church / parish recipe books from a specific year, or a county collections recipe book. Little slices of time and culture make my brain go brrrrrr.

Abbreviations: tsp = teaspoon, TBSP = tablespoon

Hjalli's Meatballs
Ingredients:
- 1 lb ground meat (beef or pork)
- 1 egg beaten
- 1 1/2 TBSP ketchup
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried oregano or basil (or both)
- 1 tsp black pepper
- 1 tsp salt
- one half of a 1/3 cup of flour
- optional: 1 tsp sriracha or hot sauce

Meatball Method
Preheat the oven to 400 degrees F. Put defrosted meat in large bowl. Mash meat with a large fork so it's just nice and separated. Throw all of the other ingredients into the bowl. Mix into the meat well. Bust out
your baking sheet and line with parchment paper. Form meat into small-ish meatballs (no larger than 1 inch) and place on the baking sheet. Bake for 15-20 minutes. Devour.

Note: If cooking with ground pork, sometimes the meatballs can be a tad drier than with beef. Feel free to add a smidge more liquid (such as more ketchup, or even throw some mayo in there. Go crazy.)
